Every time a bell rings…

...a vegetarian gets his wings...

And by wings I mean this:

Bread - Pesto - Onions - Cheese - Bacon - Burger - Bacon - Cheese - Burger - Bread

Now one might wonder why I mentioned vegetarians when this burger definitely contains both bacon and what appears to be two large meat patties. I say that because up until my recent move south of the equator I was a vegetarian...for 6 years. As in full-on-no-fish-or-meat vegetarian. Now I make and eat things like the above.

To fully outline exactly how non-vegetarian this dish is let me throw up a quick little recipe:

Start with a dab of butter in a hot skillet. Add a few pieces of bacon (I used three that barely fit in the pan). Cook very slowly to render out all of the fat. Remove the bacon and then use the fat to fry the burger patties, one at a time (they can be kept in a warm oven to maintain their temperature). Then slice thickly some shallots and pan fry with a pinch of salt. Toast the buns, spread on some home-made pesto and layer everything together with some sliced local cheese.

Deeeee-lish!
